Skype can make calls to phones. I used it all the time while in South America to call back to the US.

Apple just came out with the skype app for iPad. I've never used it. Is it better than face time or similar?

I agree with Candess that Apps are personal. That being said we (Strong Solutions) have some recommendations:

DropBox

Google

Dragon Dictation

WebEx, GoToMeeting,  (if you do any web conferencing)

Remote (Apple - Control iTunes, AppleTV, etc.)

iBooks (Apple)

I think you mean Flipboard rather than Flipbook. I agree with that choice.

Some others that I personally feel are pretty handy:

Free Apps

  • Evernote
  • Zite
  • News360
  • Pulse
  • FLUD
  • Dropbox

Paid Apps:

  • Instapaper
  • River of News
  • FlightTrack Pro

Flipbook is a great one.

I think it is really personal Courtney, but I love my language program. I am learning Japanese and it is easy to do it on my iPhone. I just didn't get around to learning with a CD, but this works for me.
